Warm Up with Inkoon Puuro: A Comforting Porridge from Inkoo

Porridge is a traditional dish in Finland and there are many varieties of them. It is a simple delicious meal, easy to make, nutritious and healthy. Often foreigners know about oat porridge (kaura puuro), because it is a popular dish served also at schools and kindergartens. However there are other types of porridge as well to enjoy which are hearty, tasty, and suitable for breakfast, light dinner or as snack times for kids and families.
Inkoo is a municipality in the western part of the Uusimaa region, situated in the southern coast of Finland. Therefore the name of the dish Inkoon puuro, means that it is a dish from the Inkoo region. This dish is known also as peruna-puuro which means potato porridge, because it is made of potatoes which are another food highly consumed in Finland.

Ingredients:
5 potatoes
5 dl water
1 dl barley flour (or rye flour)
1 teaspoon salt
Instruction:
-Cook the potatoes by simply boiling them.
-Peel them and mash them well to make it puree.
-Mix the mashed potato with water, and bring to the boil, mix well until smooth, with no lumps.
-Mix the salt and barley flour (or rye flour if using) in the pot, whisk and stir well and lower the heat.
-Cook the porridge on low heat for almost one hour, stirring occasionally.
-Enjoy it as a warm dish or with milk of your choice, also you can enjoy it with berries on top or with berry jam such as lingonberry jam or a delicious homemade queens jam.
Note: if the porridge seems very thick and hardened, add some more water, continue to cook for more 5-10 minutes.
