Easy Delicious Rhubarb Strawberry Crumble/ Raparperi-Mansikka Paistos

Spring is here, and with that arrives the season of healthy vegetables such as rhubarb, a good source of vitamins, fibers, and antioxidants. Mothers are usually interested in providing healthy meals for the family; therefore, this aromatic and tasty dish is going to be favorite.  


Ingredients 


Topping 

2 dl oat flakes (iso-kaura-hiutale)

1 dl coconut flakes

1 dl almond flakes or chopped pecan nuts (optional)

2-3 tbs brown sugar

1 ts cinnamon 

½ ts cardamom 

1 ts vanilla (optional)

Juice of one orange freshly squeezed


Filling 

3 rhubarb stalks, medium size

1 container of strawberries (about 300 grams)

3-5 tbs maple syrup (or brown sugar) 


Instructions 

Preheat the oven to 180.


Filling: 

-Chop the rhubarb into small cubes. 

-Chop half of the amount of strawberries into small pieces.

-Mix the rhubarb and strawberries with syrup (or sugar if using); syrup gives better results. 

-Adjust the sweetness depending on the amount of rhubarb, or if strawberries are sour. 

-Transfer the mixture into an oven pie dish. 


Topping:  

-In a separate bowl, mix all the dry ingredients for the topping, and transfer it to your dish by spreading it evenly on top of the rhubarb-strawberries filling mixture.

-Add the orange juice on top of the whole dish. 

-Bake in the oven for about half an hour, or until the top is golden, slightly brown. Let it cool.


Decorate it in the end with the rest of fresh strawberries on top. Serve alone or with your favorite ice cream or yogurt.
