Potato salad- Perunasalaatti
Potato salad is one of the all-time favorites of people for most occasions, for quick family meals, or for parties such as barbecue, potluck, or even picnic. Here is an easy potato salad recipe perfect to bring to work or to outdoor activities as well.
Ingredients:
1 kilo baby potatoes
3 celery ribs diced in small
5 small radishes sliced thin
1 small red/white or spring onion diced finely
1-2 small pickled cucumber/suolakurkku diced finely (or 2 tablespoons capers)Â
1 small apple diced (optional)
For the dressing:
1 cup fresh dill, finely choppedÂ
1/2 cup fresh parsley, finely chopped
1/4 cup vinegar
1-2 tablespoons mustard (optional)
2 garlic cloves, minced
3-5 tablespoons favorite mayonnaise (optional, see also other alternatives below in ‘Tips’)
salt and pepper to taste
Boil and cook potatoes in plain water. Drain, let it cool, then peel and transfer them to a large bowl. If potatoes are small, you can opt not to cut them if preferred, otherwise, cut them in cube sizes. Top with celery, radishes, and onions. Give it a gentle mix and set aside. Put all the dressing ingredients in a bowl and whisk well with a fork. Taste and adjust the preferred flavor and then pour it over the potato salad. Mix well again gently to evenly cover all the ingredients. Transfer to a suitable container if taking to work/outdoor use.
Tips:
*There's a large variety of mustard (if using) in the shops. Choose your favorite, perhaps more kid-friendly, but note that this salad would already taste good even without mustard.
*If you like a creamy potato salad, but you don’t want to use mayonnaise, mash well a fresh ripe avocado with a fork to get it creamy and smooth, add to the mixture, and combine well. Mustard also gives a creamy texture if combined well with a small amount of water, vinegar/lemon and tahini (sesame paste). Some people may use mayonnaise in the potato salad, but using avocado and tahini is not only a much healthier and more nutritious option especially if you have kids, but also very tasty when mixed in the seasoning.
*Some people enjoy potato salad alone, and some prefer to enjoy it with dry bread. There's a large variety of healthy whole grain dry bread/crackers in shops known in Finland as näkkileippä, or hapan-korppu, a tasty and versatile pair to potato salad.
