Karelian stew - Karjalanpaisti

Finns usually eat Karelian stew in November. It's a traditional Finnish food that's when properly prepared, the meat melts in the mouth. If you do this recipe, you'll have an easy and hassle-free everyday meal for the whole family.
Ingredients (about 5 servings):
Karelian stew
800g roast beef (beef and/or pork roast)
2 carrots
2 onions
1¼ tsp salt
1 tablespoon allspice
1 tsp black pepper (whole)
2 bay leaves
Preparation:
Bring the roast beef to room temperature about half an hour before cooking. Peel carrots and onions. Slice the onions and cut the carrots into bits. Put stew meat pieces, vegetables, and spices in layers in the oven pot. Pour enough water to cover the meat. Insert the Karelian roast into a 200-degree oven. First cook for 1 hour without a lid, which will brown the top meat. Lower the temperature to 175 degrees and simmer (hautaa) for another 1 1/2 hours until the meat is tender (murea). Cover the Karelian roast at the end of cooking with a lid, adding more liquid if necessary.Â
