The Finnish salmon soup (lohikeitto) is a popular soup in Finland suitable for any event all year round. Salmon is a local delicacy which makes this recipe easy to prepare and cook at home. It’s the go-to recipe for busy weekdays and family parties.

1 bay leaf
8 dl water
2 dl cream
1 1/2 tl salt
1/2 tl pepper
Wash, peel and chop potatoes, carrots and onions.
Season pepper and bay leaf with the cooked the vegetables.
Remove the skin from the salmon fillet and cut into cubes,
Add cream, salt ,and sliced salmon.
Boil on low heat until the fish is cooked enough. This will take about 5 minutes.
Add dill as much as you want and serve.
Tips: You can buy ready-to-cook frozen pack of veggies in the supermarket.
